Ask ten roasters what makes one bag of coffee taste different from the next, and altitude, processing, and roast level will come up fast. But underneath all of that sits something more fundamental: the coffee variety — the specific genetic line of the plant the cherry grew on. A washed Ethiopian and a washed Colombian can taste worlds apart partly because they aren't even the same variety of coffee, let alone the same country.
Coffee varieties are the plant genetics behind every cup — the reason Gesha tastes like jasmine and bergamot while Robusta tastes like burnt rubber and iodine, and the reason a Bourbon and a Caturra grown on the same hillside still cup differently. What Is a Coffee Variety, and Why Does It Matter?
A coffee variety is a genetically distinct population within a coffee species — Typica and Bourbon, for instance, are both varieties of Coffea arabica, distinguishable by traits in the plant's growth habit, leaf structure, cherry color, and, ultimately, the way they taste in the cup. Botanically, a variety must be distinct from other varieties, reasonably uniform within itself, and stable when it reproduces — the same three tests used for grape varieties in wine.
It helps to keep the vocabulary straight, because these words get used loosely even within the industry:
- Species is the broadest classification — Coffea arabica (Arabica) and Coffea canephora (Robusta) are the two species that matter commercially, alongside minor species like Coffea liberica.
- Variety is a genetically distinct population within a species, arising either naturally (a mutation) or through breeding.
- Cultivar, short for "cultivated variety," technically refers to a variety produced through intentional selection or breeding rather than a spontaneous mutation — though in everyday coffee talk, "variety" and "cultivar" are used interchangeably.
- Varietal describes a single lot or farm's coffee in terms of the variety it contains — it's correct to say a lot is "100% Bourbon varietal," but "varietal" itself isn't a synonym for "variety."
Why any of this matters to a reader who just wants a good cup: variety shapes flavor potential, but it doesn't work alone. A Bourbon grown at 2,000 meters in Ethiopia's neighboring highlands and a Bourbon grown at 800 meters in a hot lowland will taste nothing alike — altitude, soil, processing, and roast all interact with what the variety brings to the table. Variety sets the ceiling; everything else determines how close the coffee gets to it.
Coffee varieties are the plant equivalent of grape varieties in wine — Typica is coffee's Pinot Noir: old, temperamental, and capable of extraordinary quality when everything else lines up.
The Two Species That Matter Most — Arabica and Robusta
Of the more than 120 identified species in the Coffea genus, only two are grown at meaningful commercial scale: Coffea arabica and Coffea canephora, together accounting for roughly 99% of world coffee production.
Arabica originated in the highland forests of southwestern Ethiopia and neighboring South Sudan, and today supplies around 60% of global production, grown mainly across Central America, South America, and East Africa at higher altitudes (generally 800–2,200 meters). Arabica plants are self-pollinating, which limits their natural genetic diversity but also makes them relatively predictable to propagate. In the cup, Arabica is prized for sweetness, acidity, and a wider range of complex flavors — florals, fruit, chocolate — and it carries less caffeine than Robusta, generally in the range of 0.8–1.5%.
Robusta, more properly Coffea canephora, is native to West and Central Africa, from the Guinea coast through the Congo Basin and Uganda. It's easier to grow, more disease-resistant, higher-yielding, and tolerant of lower altitudes and hotter climates, which is why it now supplies around 35–40% of world production and dominates in Vietnam, Brazil, and much of West and Central Africa. Robusta contains roughly twice the caffeine of Arabica — about 1.7–3.5% — and its cup profile is heavier-bodied, harsher, and lower in acidity, with tasting notes that run toward woody, rubbery, and grain-like. It's the backbone of most instant coffee and a component in many espresso blends, particularly in Italy, where a Robusta component adds body and a thicker crema.
For decades the industry treated Robusta as simply a lesser cousin of Arabica. Genetic sequencing overturned that picture: Robusta isn't Arabica's sibling species — it's one of Arabica's two parents. Coffea arabica is now understood to have arisen from a natural cross between Coffea canephora and a third wild species, Coffea eugenioides, somewhere near the Ethiopia–South Sudan border. ⚠️ The exact timing of that hybridization event is still debated among researchers and should be verified against the most current genetic literature before publishing a specific date.
The two species are genetically compatible enough to be deliberately crossed by breeders today, producing hybrids like Arabusta and the Timor Hybrid lineage that runs through much of modern disease-resistant Arabica breeding — more on that below.
The Founding Arabica Lineages — Typica and Bourbon
Nearly everything grown as specialty Arabica today traces back to two founding lineages, and the story of how they left Ethiopia is also the story of coffee's narrow genetic base.
Coffee was domesticated in Yemen, where farmers selected the best-performing plants from stock that had originally been carried across the Red Sea from Ethiopia. From roughly 1550, the Ottomans controlled the Yemeni port of Mocha and, wanting to protect their monopoly on coffee production and trade, made it a capital offense to export a living coffee plant. That prohibition held for well over a century — and it is the single event most responsible for the genetic bottleneck that still defines cultivated Arabica today. Every major Arabica variety grown outside Ethiopia descends from a small number of plants that eventually slipped past that ban.
The escape came in the 1690s, when the Dutch smuggled a handful of seedlings — believed to be the variety later called Typica — out of Yemen to Java. Genetic research has since confirmed just how narrow that founder population was: a 2024 genome-sequencing study published in Nature Genetics found that essentially all cultivated Arabica varieties trace back to this narrow Typica and Bourbon lineage, with only a small number of wild Ethiopian ecotypes falling outside it.1 The practical result is that, genetically speaking, almost all commercial Arabica in the world is remarkably closely related — which is part of why a handful of natural mutations, appearing generation after generation from the same narrow stock, became the basis for nearly every named variety that followed.
Nearly the entire global Arabica supply can be traced back to a genetic bottleneck no wider than a few smuggled seedlings and a single, centuries-old prohibition on exporting a living coffee plant.
Typica
Typica is considered the closest living relative to wild Ethiopian coffee among the cultivated varieties, and it's the lineage the Dutch carried out of Yemen and planted in Java before it spread — via Amsterdam's botanical gardens — to Suriname, the Caribbean, and eventually most of the coffee-growing world. It produces a relatively small yield and a tall, gangly tree that's more vulnerable to disease and wind damage than later varieties, but it's still capable of exceptional cup quality: balanced, sweet, often citric, and considered by many to be closest to the platonic ideal of what a clean, high-quality Arabica should taste like. Because of its long and scattered migration, Typica goes by a long list of regional names — Criollo, Sumatra, Arabigo, and Djember Typica among them — that all describe genetically near-identical stock.

Bourbon
Bourbon is a natural mutation of Typica that occurred on the French colonial island then called Bourbon — today's Réunion, off the coast of Madagascar — sometime between the mid-18th and late 19th century. It out-yields Typica and is generally considered to bring more body and a distinctive sweetness to the cup, with fruit-forward notes where Typica tends toward the floral. Bourbon cherries can ripen red, yellow, or occasionally orange depending on the sub-variety, and the variety was so widely favored by 19th-century French coffee traders that it displaced Typica across much of Latin America, becoming the dominant stock behind Brazil's 19th-century production boom.

The Commercial Revolution — Dwarf and High-Yield Varieties
Typica and Bourbon dominated for roughly two centuries with no deliberate breeding involved — every subsequent variety in this section descends from spontaneous mutations of one or the other, later formalized through selective breeding, mostly out of Brazil. This is where the tension that runs through the rest of modern coffee breeding first shows up clearly: agronomic traits like yield, compact size, and disease resistance almost always trade off against cup quality, at least in the first generation of any new cross.
Caturra
Caturra is a natural dwarf mutation of Bourbon, first identified in Brazil's Minas Gerais state in the 1930s (some sources cite a discovery around 1937) and later actively bred by agronomists at Brazil's Instituto Agronômico de Campinas. Its compact, low-growing habit makes hand-harvesting easier and lets farmers plant it more densely, and it fruits after only about three years versus a longer maturation for Typica. Cup quality is generally described as Bourbon-like — good, sometimes very good at higher altitude — but the tree is prone to "overbearing," producing more cherries than it can properly ripen and support, which can shorten the plant's productive life without careful farm management. Caturra became especially important in Colombia and Central America from the 1970s onward.

Catuaí, Mundo Novo, and the Breeding Programs
Mundo Novo is a natural hybrid of Typica and Bourbon discovered in Brazil in the 1940s — essentially the best of both parents, combining reasonable cup quality with higher yield, greater vigor, and better performance at the mid-altitude conditions common across Brazil. Brazilian breeders at the Instituto Agronômico de Campinas then deliberately crossed Mundo Novo with Caturra to create Catuaí in the 1950s–60s, aiming to combine Caturra's compact, easy-to-harvest structure with Mundo Novo's yield and disease resistance. Catuaí succeeded well enough that it remains one of the most widely planted coffee varieties in all of Latin America today.
From there, breeding accelerated. In the mid-20th century, Brazilian researchers began crossing Caturra with a naturally occurring Arabica–Robusta hybrid discovered on the island of Timor — the so-called Timor Hybrid — to produce Catimor, a high-yielding, rust-resistant dwarf that could be grown at lower elevations. A parallel cross with Villa Sarchi, a Costa Rican Bourbon mutation, produced the related Sarchimor line. Both introduced Robusta genetics into cultivated Arabica for the first time, trading some cup quality for disease resistance that became essential as coffee leaf rust spread through Latin America — most severely in the 2012–13 epidemic that devastated smallholder farms across the region.
The most recent chapter is the F1 hybrid, which crosses genetically distant parents — often a wild Ethiopian landrace with a modern rust-resistant variety — to capture "hybrid vigor," or heterosis: offspring that outperform either parent. Costa Rica-bred hybrids like Centroamericano have scored above 90 points in national Cup of Excellence competitions, suggesting that the old tradeoff between yield and quality isn't as fixed as it once seemed — though F1 hybrids still require lab propagation and remain more expensive to plant than traditional pure-line varieties.
Every high-yield variety bred since the 1930s has had to answer the same question Brazilian agronomists first faced with Caturra: how much cup quality are you willing to trade for a tree that survives, yields, and pays the farmer's bills?
The Outliers — Gesha, Liberica, and Coffee's Genetic Fringe
Not every important variety fits the Typica/Bourbon commercial lineage. Two of the most talked-about names in specialty coffee sit outside it entirely, for very different reasons.
Gesha
Gesha (also spelled Geisha) takes its name from a town in southwestern Ethiopia's forests, where the variety originates as one of the country's many indigenous heirloom populations, genetically distinct from the narrow Typica/Bourbon lineage that dominates the rest of the world's Arabica. Seed collected from the area was sent through Kenya and Tanganyika to a genebank in the 1930s–50s, eventually reaching Costa Rica's CATIE collection, from which Panama's government imported several varieties in the 1960s in a search for leaf-rust resistance. Gesha plants were distributed to farms around Boquete, including Hacienda La Esmeralda — but for decades, farmers largely ignored the variety because of its low yield, brittle branches, and demanding growing requirements.
That changed in 2004, when the Peterson family at La Esmeralda separated their Gesha cherries from a single hillside and entered the lot in the Best of Panama competition. The coffee's intensely floral, jasmine-and-bergamot cup profile stunned the judges, and the lot sold at auction for $21 per pound — a shocking price at the time. Records kept falling in the years after: $130/lb by 2007, $350.25/lb by 2013, and $803/lb by 2018, before Lamastus Family Estates' Elida Geisha broke $1,000/lb for the first time in coffee history in 2019, selling for $1,029/lb. The variety is now planted well beyond Panama, across Colombia, Ethiopia itself, and other origins chasing the same aromatic intensity.
Gesha is a story about a genetic outlier that was hiding in plain sight for decades before the market caught up to what it could do — proof that Ethiopia's uncatalogued heirloom diversity, estimated at anywhere from 6,000 to 10,000 unique wild accessions, may still hold varieties nobody has properly tasted yet.

Coffea Liberica
Where Gesha is an outlier within Arabica, Liberica is an outlier at the species level. Coffea liberica is a distinct commercial species in its own right — not a variety of Arabica or Robusta — native to Liberia and West Africa, with notably larger leaves, cherries, and beans than either Arabica or Robusta, and a tree that can grow considerably taller. It represents a tiny fraction of global production today; the Philippines is its largest grower, where it's known locally as Barako, and it also appears in small volumes in Malaysia and parts of West Africa. Liberica's cup profile is genuinely different from mainstream coffee — full-bodied, low in acidity, often described with woody, smoky, and dark fruit notes, sometimes with a distinct jackfruit-like character that surprises tasters expecting a standard Arabica or Robusta profile.
Liberica had all but disappeared from commercial cultivation for much of the 20th century — it was historically planted as a fallback after coffee leaf rust devastated Asian Arabica plantations in the 1870s — but it's been experiencing a small resurgence as specialty buyers look for genuinely different flavor experiences and as breeders explore its genetics for disease-resistance traits that Arabica lacks.

Robusta's Own Family Tree
Robusta gets treated as a single monolithic category far too often, but Coffea canephora has its own internal variety structure, even if it's less codified than Arabica's. Robusta was first identified for commercial potential in the Belgian Congo in the late 19th century, and cultivated populations spread from there to Java and eventually to nearly every Robusta-growing region in the world, carrying regional names that often obscure how closely related the underlying plants are.
Conilon is Brazil's name for its Robusta varieties, grown heavily in the state of Espírito Santo, where it's prized for resilience, high yield, and a bold, assertive character that Brazilian producers increasingly work to showcase rather than hide in commodity blends. Beyond the well-known commercial species, coffee's genetic diversity runs deeper still. Madagascar and the surrounding Indian Ocean islands are home to a striking number of wild, uncultivated Coffea species — part of the more than 120 species identified across the genus — most of them low in caffeine and none of them commercially significant, but collectively representing a genetic reservoir that breeders are only beginning to explore for future disease resistance and climate adaptation traits. How to Actually Use Variety Names When Buying Coffee
A variety name on a bag is useful information, but it's not a quality guarantee by itself — and knowing how to read it correctly will save you from both overpaying and underestimating a coffee.
First, treat variety as one input among several, not the whole story. The same variety grown at different altitudes, with different processing, by different producers, can taste dramatically different. A Caturra processed as a natural at 1,800 meters can outperform a Gesha grown carelessly at 1,000 meters. Altitude, in particular, tends to concentrate sugars and acids and slow cherry maturation, which is why almost every variety profile above notes that quality improves — and yield drops — as elevation increases.
Second, watch for variety names used as informal umbrella terms. "Bourbon" on a bag might mean the original Bourbon mutation, or it might mean one of its many descendants (Pacas, Villa Sarchi, Caturra) that share the same genetic root but taste distinctly different. "Typica" gets applied to a whole family of near-identical regional strains — Criollo, Sumatra, Djember — that trace to the same founder population but picked up different names as they spread.
Third, use variety as a signal of what to expect, not a promise. Bourbon-lineage varieties tend toward sweetness and body; Typica-lineage toward floral clarity and delicacy; F1 hybrids and Ethiopian heirlooms toward complexity and unpredictability, in a good way; and Robusta toward strength, body, and lower acidity, whatever regional name it's sold under. Pair that expectation with the origin, the processing method, and — where available — the roaster's own tasting notes, and the variety name becomes genuinely useful rather than just trivia on a label.
